1 cup rolled oats
2 cups shredded coconut
1 teaspoon sea salt
1/3 cup cacao nibs
2 tablespoons cinnamon
Pulse the above ingredients in a food processor a few times until combined. Add:
1/3 cup coconut butter
1/2 cup almond butter
1/3 cup maple syrup
12 dates, pitted
Mix in the food processor until it resembles cookie dough. Place the dough into a large bowl and add:
2/3 cups rolled oats
1/2 cup currants
Mix by hand to combine. Form into small cookies and place in the refrigerator to chill.
